Ferritin: A New Mineral Carrier for Supplement

Abstract: The cavity of apoferritin can be used to transport various minerals. Since this protein can be absorbed by intestinal epithelial cells via entocytosis pathways, it becomes a new promising type of mineral nanocarrier. The process of deferrization for ferritin and mineral loading has been studied by transmission electron microscope (TEM), energy dispersive X-ray spectroscopy (EDS), X-ray powder diffraction (X-Ray), mass spectroscopy (MS), nuclear magnetic resonance (NMR), dynamic light scattering (DLS) and ultraviolet spectroscopy (UV), respectively. Recents applications of apoferritin carriers in the field of nutrition are summarized in this paper.
