Analysis of Chemical Composition and Microbial Index of Xinjiang Jiangyue Donkey Milk

Abstract: This study was conducted on the chemical composition and microbial index of Jiangyue donkey milk obtained from Xinjiang Province. The results showed that donkey milk contained total solids 9.50%, protein 1.52%, fat 1.18%, lactose 6.39% and ash 0.38% on average and was more similar to human milk than other animal milk. The count of total bacterial, bacterial endospores, lactic acid bacteria, S.aureus and coliforms was found to be 4.17, 2.40, 3.30, 2.83 and 1.18 lg CFU/ml, respectively.
