Abstract: The chemical properties of tannase immobilized with chitosan by crosslinking-attachment method were studied. The optimum reaction phs for immobilized Iannase (ITA)and tannase(TA)were 3.0 and 5.5 respectively.The optimum reaction temperatures for ITA and TA were 50℃ and 40℃ respectively.The apparent KM of ITA was 1 .3845 x 10-1 mol/L, while KM of TA was 6.7500 x 10-5 mol/L, Residual enzyme activity of ITA was over 60% in tile PH range of 3.0 8.0.while that of TA was in PH 3.0 6.0 range.The enzymeactivity of ITAhad no change when it was dipped into 80℃ water for one hour.whereas the enzyme activity of TA lost in 60℃ water for thirty minutes.ITA and TA were storaged for twenty days under the conditions of 4℃ and 30℃, the residual enzyme activity of ITA was over 40% regardless of 4℃ or 30℃ thile that of TA was as low as 20%.
