The Qualilty of Freeze-drying Foodstuffs in Vacuum

Abstract: The paper investigates the factors of affecting water-reabsorbing capacity, colour and bacterial infection of freeze-drying foodstuffs. It also analyses how to modify the quality of freze-drying foodstuffs.
