Research Hotspots and Evolution of Food Quality and Safety Management: A Bibliometric Analysis Based on Web of Science Database

Abstract: In past years, food quality and safety issues have frequently occurred worldwide. Hence, analyzing the research hotspots and evolution paths of food safety and quality management is of great significance to improving the level of food quality and safety management in the country. Bibliometric analysis was carried out on research papers and reviews on food safety management published in 2004–2019 retrieved from the Web of Science (WoS) core collection database. The results showed that the popularity of the food quality and safety management field has continued to increase in recent years, mainly focusing on food safety, risk assessment, and risk management. Most studies focus on foodborne hazard management, food traceability and environmental factors related to food safety. In conclusion, this paper demonstrates that food quality and safety management in China can be improved from the following three aspects: paying attention to food safety from the source, strengthening smart supervision by integrating new technologies, and ensuring food safety governance by perfecting the food safety management system.
