Aroma Threshold and Binary Synergy of Furanone, 5-Methylfurfural and 3-Methylthiopropanol in Msalai

Abstract: Caramel aroma is the typical characteristic aroma of Msalais, and 5-Methylfurfural (5-MF), Furanone (DMHF) and 3-Methylthiopropanol (3-MTP). Because their thresholds and interactions are still unclear. In this paper, 3-AFC was used to determine the thresholds of 5-MF, DMHF and 3-MTP, and the S-curve and σ-τ plot wree used to analyze their binary interaction, in order to provide a reference for the flavor control of Msalais products: The threshold values of 5-MF, DMHF and 3-MTP in simulated wine with alcohol content of 12% are 190.000 μg/L, 45.000 μg/L and 382.000 μg/L, respectively, and the threshold values of 12% alcohol content of Msalais deodorant are: 97.580 μg/L, 798.950 μg/L and 196.533 μg/L. After research, it was found that the sugar content of 7.4~7.9°Brix and the sugar content of 6.4~7.9 °Brix deodorant liquid (12% alcohol content) found that the two sugar content had little effect on the three aroma thresholds, There was no significant difference in the thresholds of the 3 aromas in the 8%, 10%, 12%, 14% alcohol content of Msalais deodorant (7.4~7.9 °Brix). The binary mixed solutions of the three aromas in the simulated wine with 12% alcohol content and 12% alcohol content in Msalais deodorant (7.4~7.9 °Brix) fluids showed addition effects through the S-curve and the σ-τ plot.
