New progress in detection of food allergens by biosensors based on nanomaterials

Abstract: Food allergy has become one of the prominent problems in the field of food safety and public health. There is no effective treatment for food allergy, and it is still the best choice for allergic patients to avoid contact with and ingest food allergens according to label information. Therefore, the development of sensitive, accurate and efficient allergen detection technology is crucial to protect consumers' safety and interests. As a multidisciplinary cross detection technology, biosensor has the advantages of high specificity, fast reaction speed and simple operation. The rapid development of nanomaterials has promoted biosensors to be highly sensitive, high-throughput and visual detection. In recent years, biosensors based on nanomaterials have been applied in the field of food allergen detection. This paper summarized the general situation of food allergy detection by biosensors, and analyzed the new research progress of various biometric elements and biosensors based on different nano materials in the field of food allergen detection, with a view to providing more reference for further research and application of food allergen detection by biosensors.
