Research progress in rapid detection technology of fresh food deterioration in cold chain transportation

Abstract: Cold chain storage and transportation provide strong guarantees for the quality of fresh food. Currently, China's cold chain system is still in a rapid construction phase, and it is not uncommon to see deterioration of fresh food caused by uncontrolled cold chain conditions. Therefore, the development and application of rapid and sensitive detection methods for the deterioration of fresh food during cold chain storage and transportation processes are of great significance for timely and effective quality safety warning and control of fresh food. This article provides an overview of rapid detection technologies applied in monitoring the deterioration of fresh perishable food products in cold chain. A comprehensive review is conducted on various methods including indicator testing, spectroscopy techniques, and sensors, with a particular focus on fast detection technologies based on new materials (nanomaterials, composite materials), new devices (smartphones, smart packaging), new approaches (artificial intelligence, neural networks), as well as the application of in-situ real-time mass spectrometry detection methods. The advantages and limitations of each method are discussed, and future development prospects are explored to provide reference for the development and practical application of rapid detection methods for deteriorating fresh perishable food products in cold chain.
