Application of Targeted Proteomics in Food Safety Detection

Abstract: Food safety is a major concern for people all over the world. Targeted proteomics based on mass spectrometry plays an increasingly important role in addressing this issue due to its high sensitivity, specificity, and quantitative accuracy. In this paper, current targeted proteomics approaches (multiple reaction monitoring and parallel reaction monitoring) are briefly introduced; the latest research progress of targeted proteomics in food safety detection in the last five years, including authentication of foods of animal origin, analysis of food allergens, detection of foodborne pathogens and their toxins, are summarized; the future development of this field is finally prospected.
