Effect of Zein/Tea Polyphenols/Apple Pectin Self-assembly Coating on Fresh Walnut Kernels

Abstract: In this study, zein, tea polyphenols, and apple pectin were used as raw materials to prepare mixed films and self-assembled films by casting. Afterward, the fresh walnut kernels were treated with three different methods by immersion, namely mixed coating treatment (mixed coating group), self-assembled coating treatment (self-assembled coating group), and sterile water immersion treatment (control group). They were stored at 4°C for 40 days to evaluate the preservation effects of mixed coating and self-assembled coating on fresh walnut kernels. The results showed that the mixed film generated particles and the surface distribution was relatively uneven. However, the self-assembled film had a more uniform distribution and a relatively smoother surface than the mixed film. After 40 days of storage, the brightness and hardness of the fresh walnut kernels in the mixed coating group were significantly higher than those in the control group but significantly lower than those in the self-assembled coating group. There were no significant differences in the moisture content and total bacterial count of the fresh walnut kernels in the mixed coating group and the self-assembled coating group. The antioxidant activity of the self-assembled coating was significantly better than that of the mixed coating, as shown by the significantly lower acid value, peroxide value, and malondialdehyde content of the fresh walnut kernels in the coating group than in the mixed coating group during storage. In addition, the self-assembled coating has a certain potential to protect the flavor of fresh walnuts. After 40 days of storage, the fresh walnut kernels in the self-assembled coating group contained the sweetest amino acids and umami amino acids, and the content of acetic acid with the sour and pungent odor was significantly lower than that in the mixed coating group and the control group. The study showed that the self-assembled coating of zein/tea polyphenols/apple pectin could potentially maintain the quality of refrigerated fresh walnuts. The results of the study provide theoretical basis and application support for the construction of multilayer self-assembled coating film applied to fresh walnut kernel storage and preservation.
