This paper makes use of orthogonal test to confirm the optimum conditions for hydrolyzing casein by using immobilized enzyme,and studies the process and conditions for extraction and purification from hydrolysate to produce CPP.The results of CPP produced by ourselves are as follows:The molecular weight of Q -CPP is 5000, whose content is 1l%.The molecular weight ofβ -CPP is 3300,whose content is 4%.The total phosphorus is 3.64%.The total nitrogen is 6.97%.The value of N/P is 4.23.

he scavenging effects of’ grape seed and .grape peel water extract on active oxygen superoxide radical (d- )and hydroxyl radical (’ OH ) ’were studied by chemiluminescence assay,and their scavenging effect on 1. 1 Diphenyl-1-2-picryl (DPPH ) was studied by spectrophotometry’.The results show’. that scavenging effects of grape seed and grape peel water extracts on O2’ OH and DPPH’ are strong with quantitative relationship.It indecate that there are some anti-free radical substances present in grape seed and grape peel.Their anti-free radical active orders are fresh grape seed;>grape peel>dry grape seed.

In this paper by’ passing through tube culture and biological assay the effects of oxygen-resistand bifidobacterium were studeied.It was found that oxygenresistant bifidobacterium strongly by restrained the activities ofenterotoxigenic F.coli (ETEC) and Stasphylococcus. Heat-labile and heat stable Enterotoxigenorig were biodegradatied by oxygen-resistant bifidobacterium.It was. identified that Enterotoxin was fermented to nutrients.
