油菜蜂花粉蛋白酶解条件的研究

摘要: 通过单因素试验,以水解度为标准对中性蛋白酶、木瓜蛋白酶和碱性蛋白酶的最佳反应条件和对花粉蛋白的酶解能力进行了研究。碱性蛋白酶对于油菜蜂花粉的水解作用最强,依次减弱为中性蛋白酶和木瓜蛋白酶。碱性蛋白酶的最适条件为pH9、50℃下加入3000U/g的酶量水解3h。

Abstract: The enzymatic hydrolysis of rape bee-pollen protein by three protease was studied. With hydrolysis degree as the standard, the best conditions for enzymatic hydrolysis were confirmed by single factor test. The best conditions of alcalase for hydrolysis are pH 9, 50 ℃, the adding amount of 3000U/g, reacting for 3 hours.
