摘要: 高氯酸盐是一种持久性的污染物,广泛存在于食品中,能竞争性地抑制碘摄取,从而损害甲状腺功能,影响婴幼儿的生长发育。机体主要通过不同食品基质摄取高氯酸盐,因而研究不同食品中高氯酸盐在机体中的代谢具有重要意义。本文简要综述了食品中高氯酸盐的暴露状况、毒性作用的研究现状。

Abstract: Perchlorate is a persistent pollutant that is widely found in foods and can competitively inhibit iodine uptake, thereby impairing thyroid function and affecting the growth and development of infants and young children. The body ingests perchlorate in different foods, and so it is of great importance to study the metabolism of perchlorate in the body. In this paper, recent progress in understanding the status of dietary exposure to perchlorate and its toxicity is reviewed.
