摘要: 食品口腔加工以食品与人体相互作用为基础,通过学科交叉研究食品在口腔过程中的滋味物质释放与感知规律和作用机制,是设计出更符合消费者感官需求的食品的重要前提。本文综述酸、甜、苦、鲜和咸味5 种基本滋味感知的物质基础和感知机制;探讨口腔加工过程中食品滋味物质检测的传统分析和感官评价方法,以及脑科学评价技术,旨在为食品的滋味品质精准调控和仿生制造提供重要科学依据和数据支撑,助力食品风味设计的高质量发展。

Abstract: Food oral processing is based on the interaction between food and the human body, and interdisciplinary research on the release and perception of taste substances during food oral processing is a crucial prerequisite for designing foods that better meet consumers’ sensory preferences. This review summarizes the material bases and mechanisms of the five basic taste sensations: sour, sweet, bitter, umami, and salty, and discusses the traditional analytical and sensory evaluation methods for taste compounds in foods during oral processing, as well as brain science-based evaluation techniques. The aims of this review are to provide a scientific basis and data support for the precise regulation of food taste quality and bionic manufacturing, and to promote the high-quality development of food flavor design.
