提香温度对川红工夫香气品质的影响

Effect of Aroma-Firing Temperature on the Aroma Quality of Sichuan Congou Black Tea

摘要: 为探明不同提香温度对川红工夫香气品质的影响,本研究设置60、80、100 ℃梯度提香处理,采用感官审评、气相色谱-质谱联用技术及多元统计分析、相对气味活性值(relative odor activity value,ROAV)等方法,系统探究不同提香温度对川红工夫感官品质、主要生化成分及挥发性代谢物的影响。感官审评结果表明:100 ℃提香的川红工夫感官审评得分和香气得分均最高,呈现橘糖香带甜香。100 ℃提香的川红工夫茶多酚含量显著下降(P<0.05),茶红素、表没食子儿茶素和儿茶素含量显著增加(P<0.05)。香气组分分析共鉴定出246 种挥发性成分和75 种差异代谢物,以烃类、酮类和醇类香气成分为主;聚类分析显示CK和60 ℃茶样聚为一类,80 ℃和100 ℃茶样聚为一类。结合ROAV分析与风味注释进一步筛选表明,(E,Z)-2,6-壬二烯醛、6-甲基-2-庚酮等19 种物质是区分不同提香温度川红工夫的关键香气差异成分,癸醛、对伞花烃、(E)-3,7-二甲基-2,6-辛二醛和6-甲基-5-庚烯-2-酮对川红工夫茶橘糖香形成具有重要作用。研究结果可为川红工夫优质高效加工提供理论依据。

Abstract: The aim of this study was to investigate the effects of different aroma-firing​ temperatures on the aroma quality of Sichuan Congou black tea. Three aroma-firing temperatures (60, 80, and 100 ℃) were evaluated. Sensory evaluation, gas chromatography-mass spectrometry (GC-MS), multivariate statistical analysis, and relative odor activity value (ROAV) analysis were employed to study the sensory quality, major biochemical components, and volatile metabolites of Sichuan Congou black tea. Sensory evaluation results showed that Sichuan Congou black tea baked at 100 ℃ achieved the highest overall sensory score and aroma score, exhibiting a citrusy candy-like aroma with a sweet note. Its tea polyphenol content decreased significantly, while its thearubigins (TRs), epigallocatechin (EGC), and catechin (C) contents increased significantly (P < 0.05) compared with the other treatments. A total of 246 volatile components and 75 differential metabolites were identified across all samples, the main ones being hydrocarbons, ketones, and alcohols. Cluster analysis revealed that control samples and samples baked at 60 ℃ were clustered into one group, while samples baked at 80 and 100 ℃ were clustered into another group. Based on ROAV analysis and flavor annotation, 19 compounds, including (E,Z)-2,6-nonadienal and 6-methyl-2-heptanone, were identified as the key differential aroma components for distinguishing Sichuan Congou black tea treated at different aroma-firing temperatures. Furthermore, decanal, p-cymene, (E)-3,7-dimethyl-2,6-octadienal, and 6-methyl-5-hepten-2-one played crucial roles in the formation of the citrusy candy-like aroma of Sichuan Congou black tea. This study provides a theoretical basis for the high-quality and efficient processing of Sichuan Congou black tea.
