某些常见蔬菜抗氧活性的研究

摘要: 利用DPPH法对21种青岛地区常见蔬菜的乙醇提取液进行了抗氧化活性研究,发现茄子、苦菜、尖椒、菜椒、西红柿等蔬菜的抗氧活性较强,其中茄子皮尤为突出。

Abstract: The antioxygenic activity of the methanol extractions of 21 kinds of vegetables were determined by DPPHmethod.IT was found that the extractions of eggplant,chili and tomato possess high antioxygenicactivity.The inhibitionrate on DPPU of eggplant skin was especially higher.
