摘要: 针对人们消费需求的变化,研制开发了具有保健作用的苦瓜啤酒。本文对苦瓜汁的制备、添加以及苦瓜啤酒生产工艺、质量要求进行了研究,并就影响产品质量的关键因素进行了探讨。

Abstract: A new balsam pear beer has been developed to meet the role of health protection according to the change of the consumerdemand. This paper studied the preparation, addition of the balsam pear juice and the manufacturing technology and qualityrequirement of balsam beer and discussed the crucial factors that would affect the product quality.
