摘要: 本文研究了Microfludizer这种微射流均质机处理膳食纤维溶液产生的一些物理性质(如粘度、光学性、固形物含量等)的影响,结果显示:经Microfludizer破碎后的物料体系出现粘度略有提高、吸光度升高、透射比下降、折光率变化较小、总固形物含量下降等现象。

关键词: 膳食纤维, 微射流均质机

Abstract: Effect of Microfluidizer(high velocity jet homogenizer) on physical properties(viscosity,optical properties,solidcontent etc.) of dietary fiber solution are investigated . The results indicate that viscosity and absorbance increased, transmittancyand solids content decreased, and refringence almost not change in Microfludizer treated dietary fiber solution system.
