摘要: 乳酸和乳酸代谢在生物体的代谢网络中扮演着重要角色,它能通过调节丙酮酸的代谢流向,调节机体内NADH/NAD+比值,调节机体的氧化还原和呼吸状态,从而可能起到了机体“还原力”库的作用。本文分析了乳酸代谢途径在不同环境条件下的调控规律,并提出了乳酸类食品可能在防癌和抗癌方面的潜在能力及食品开发前景。

Abstract: Lactic acid and its metabolism play a very important role in the body’s metabolism network. They can control the metabolic directions of the pyruvate and adjust the NADH/NAD+ ratio in the system. So the lactic acid can be considered as a good pool of‘ reductive power’, through which the body’s redox and breathing state can be well regulated. This paper analyzed the basic pathways of the lactic acid metabolism in vivo and its regulating characteristics in the different conditions and discussed the potential ability of the lactate food in defending the development of cancer and the good prospect for further research and exploitation.
