芹菜渣液化饮品的初步研制

摘要: 采用药用真菌Irpex lacteus CD对芹菜渣进行降解液化,并对液化发酵液进行饮品研制。结果表明,在72h内,菌株Irpex lacteus CD能有效对芹菜渣进行降解液化,其中可溶性液态膳食纤维(SDF)、不溶性液态膳食纤维(IDF)、黄酮及多糖含量分别能达到4.15g/L、9.3g/L、1.89mg/L和2.32g/L。对发酵液进行匀浆,并调味、调色,能获得有较高活性成分的保健饮品。

Abstract: The production of beverage from celery residue liquefied by Irpex lacteus CD was investigated.Results showed that celery residue can be degraded by Irpex lacteus CD effectively and the content of soluble dietary fiber(SDF),insoluble dietary fiber(IDF),flavonoids and polysaccharides is up to 4.15 g/L,9.3 g/L,1.89 mg/L and 2.32 g/L respectively after 72-h incubation.A health drink with some active constituents was obtained from fermention broth of clery residue after homogenating,flavouring and coloring.
