红和黄瓤西瓜中类胡萝卜素含量和组成比较

Content and Composition Comparisons of Carotenoids between Red-flesh Watermelon and Yellow-flesh Watermelon

摘要: 本研究的目的是比较红瓤和黄瓤西瓜中的类胡萝卜素含量和组成。在实验中,首先应用紫外-可见光谱法方法对红瓤和黄瓤西瓜果肉中的总类胡萝卜素含量进行测定。然后分别应用C18-HPLC和C30-HPLC对其中的类胡萝卜素及其异构体组成进行测定。UV-VIS测定结果表明:黄瓤与红瓤西瓜果肉中的总类胡萝卜素含量分别为:0.3432mg/g干重和0.1167mg/g干重。C18-HPLC和C30-HPLC分析结果表明:二者在类胡萝卜素组成上存在巨大差异。红瓤西瓜果肉中主要的类胡萝卜素为番茄红素。

Abstract: This study aimed at the content and composition comparisons of carotenoid between red-flesh watermelon and yellow-flesh watermelon. In practice,the carotenoids concents of the two kinds of watermelon were determined using ultraviolet-visible spectrometry(UV-VIS). Their carotenoid composition was then assessed with C18-and C30-HPLC. The UV-VIS detection showed that the carotenoids concents of the two kinds of watermelon are 0.3432 mg/g dw and 0.1167mg/g dw,respectively. The data from C18-and C30-HPLC assessment suggested that the carotenoid compositions of the two kinds of watermelon are quite different. The major carotenoid of red-flesh watermelon is lycopene.
