九香虫的营养成分分析与评价

摘要: 对九香虫的粗蛋白、粗脂肪、氨基酸组成及含量,脂肪酸的组成及含量,VA、VE、VB1、VB2,微量元素Fe、Cu、Zn、Pb、Hg、As的含量,以及有机氯农药残留量等进行了测定。结果表明:九香虫含有44.3%粗蛋白质,由18种氨基酸组成,含量较多的氨基酸是丝氨酸20.40%、苏氨酸15.52%,而色氨酸和缬氨酸含量较低,分别是0.30%和0.70%;含粗脂肪53.0%,油脂中含有豆蔻酸(C14:0)、十四碳-烯酸(C14:1)、软脂酸(C16:0)、软脂油酸(C16:1)、硬脂酸(C18:0)、油酸(C18:1)、亚油酸(C18:2)、花生酸(C20:0)、二十二酸(C22:0)、芥酸(C22:1)、二十二碳二烯酸(C22:2)和二十四酸(C24:0)等12种脂酸,其中有6种不饱和脂酸,不饱和脂酸含量占总油脂的57.1%;含VA214.4mg/kg、而VE、VB1、VB2含量较少;含有Fe、Cu、Zn几种微量元素,有毒元素Pb的含量达4.0mg/kg;有机氯农药残留只有α-六六六被检出,含量较少。应用E/N,以及AAS和CS等方法对其营养进行评价,E%为42.38%,E/N为0.736,符合FAO/WHO提出的参考蛋白质的模式。

Abstract:  Aspongopus chinensis Dallas on the crude protein, crude fat, amino acid composition and content, the composition and content of fatty acids, VA, VE, VB1, VB2, trace elements Fe, Cu, Zn, Pb , Hg, As content and organochlorine pesticide residues in, and so were determined. The results showed that:Aspongopus chinensis Dallas contains 44.3% crude protein, 18 kinds of amino acid composition, the content is more amino acids serine 20.40%, The 15.52%, and lower levels of tryptophan and valine, respectively the 0.30% and 0.70%;With fat 53.0%, the oil contains cardamom acid (C14:0), 14-one acid (C14:1), palmitic acid (C16:0), soft resin oleic acid (C16:1), stearic acid (C18:0), oleic acid (C18:1), linoleic acid (C18:2), peanuts acid (C20:0), 22 acid (C22:0), erucic acid (C22:1), 22-second acid (C22:2) and 24 acid (C24:0), 12 kinds of fatty acid, including six kinds of unsaturated fatty acid, unsaturated fatty acid content of the total fat of 57.1 %;With VA 214.4 mg/kg, and VE, VB1, VB2 content less;containing Fe, Cu, Zn several trace elements and toxic elements Pb content of 4.0 mg/kg;organochlorine pesticide residues were only alpha-BHC the detection, content less. Application of E/N, and the CS and AAS method to evaluate their nutrition, E% 42.38%, E/N is 0.736, in line with FAO/WHO reference to the protein pattern.
