摘要: 从动植物蛋白中通过酶学方法释放具生物活性的肽类物质是目前酶工程研究的热点课题。固定化酶技术是酶工程的核心技术之一,在生物科学研究、生物产品的制造、食品科学、化学化工及环境科学领域得到了广泛应用。开发新型载体材料,设计简单、方便、高效、条件温和的固定化方法,是固定化酶技术研究的重点。本文结合自己的工作,重点介绍了壳聚糖材料、纳米材料在固定化酶制备中的应用,定向固定化方法研究进展,蛋白酶的固定化及其在生物活性物质开发方面的一些研究进展。

Abstract: It is a hot research topic in enzyme engineering that bioactive peptides substance releasing from animal and plant protein by enzymatic methods. Immobilized enzyme technique is one of the core technologies of enzyme engineering, which is widely applied in the life science, bio-medicine products, food science, chemical and environmental science, and so on. The focus of immobilized enzyme technique is to develop new carrier materials and design simple, convenient, extremely efficient, mild conditions of the immobilized method. Based on our research, this paper mainly summarized the carrier materials such as chitosan and nanostructures, and technologies of immobilized enzyme such as oriented immobilization, and research advance in immobilization of protease and its development of bioactive components.
