食源性细菌的群体感应效应

摘要: 群体感应效应(Quorum sensing)是指微生物细胞内通过相应的感应系统感应细胞外的小分子自诱导剂的浓度从而感知菌群密度的大小,当菌群密度达到一定的阀值时激活一系列的目的基因并表达相应的特性的方式。本研究阐述了各类细菌的感应调节系统,自诱导剂的种类及相应的表型,概述群体感应效应对防止食品腐败,抑制腐败菌的生长,以及其对微生物风险评估的应用指导意义。

Abstract: Quorum sensing is a cell-cell communication mechanism by which bacteria count their own numbers by producing and detecting the accumulation of a signaling molecule that they export into their environment. This review focused on quorum sensing system of gram-positive and gram-negative bacteria, autoinducers, physiological functions and correlation with food spoilage, growth restrain of bacteria and the microbiological risk assessment of food based on quorum sensing system.
