摘要: 红枣(Ziziphus jujuba Mill.)起源于中国,有较高的营养和药用价值。多糖作为红枣中主要的活性成分之一,具有免疫调节、保护肝脏、缓解贫血、降脂减肥、调控菌群等作用。在对红枣多糖进行提取和纯化的基础上,目前关于红枣多糖的结构研究多集中于一级结构的修饰方式、单糖组成成分、分子质量及糖苷键连接方式。然而,红枣多糖结构和活性之间的关系、不同红枣多糖发挥生物活性的机制尚未完全确定。本文综述目前文献中关于红枣多糖结构表征和生物活性方面的研究进展,对近年来关于红枣多糖的研究进行评价和展望,以期能为红枣多糖广泛应用于保健食品、药品等领域提供理论基础。

Abstract: Chinese jujube (Ziziphus jujuba Mill.) originated from China and has high nutritional and medicinal value. As one of the major active ingredients in Chinese jujube, polysaccharides have various functions including immunoregulatory, hepatoprotective, anemia-relieving, lipid-lowering, anti-obesity and gut microbiota regulatory effects. On the basis of extraction and purification of Chinese jujube polysaccharide, current research on the structures of Chinese jujube polysaccharides focuses on the modification of primary structures, monosaccharide composition, molecular mass and glycosidic linkages. However, the relationship between the structure and activity of Chinese jujube polysaccharides and the mechanism of action bioactive polysaccharides from Chinese jujube have not been fully determined. This paper reviews the current progress on the structural characterization and biological activity of Chinese jujube polysaccharides in the literature, and gives an outlook on future research. It is expected that this review will provide a theoretical basis for the wide application of Chinese jujube polysaccharides in health foods, medicine and other fields.
