摘要: 本文从食品中致病菌快速检测的技术发展现状的角度出发,较系统地介绍了利用生物化学、免疫学和分子生物学的技术手段快速检测病原菌的技术和方法,特别是近几年来基因操作技术在病原菌快速检测方面的应用研究,这些技术对该领域产生了很大的推动作用。
