摘要: 在前期研究的基础上,通过对三种高压脉冲解冻装置的比较建立了高压脉冲电场解冻装置。并通过对冰、豆腐、肉糜和肉块的解冻试验,利用实验数据分析结果,揭示了在高压脉冲电场作用下对冰水相变的加速作用及其规律,然后对此规律的机理进行了探讨。
关键词: 高压脉冲电场, 解冻
Abstract: Based on initial study, through the comparison of the three high voltage pulse thawing equipments, the most properequipment was chosen. Through analyzing data of water, bean curd, minced meat and diced meat in the thawing experiment, wefound the role of high voltage pulse electric field in accelerating the food thawing and the mechanism, and then we discussed theprospect.
