摘要: 研究了富硒金针菇发酵原汁的处理、发酵饮品的配方、灭菌方式的选择等工艺。结果表明,发酵原汁的最优处理方式为:进行原汁冷置(0~3℃)24h、5000r/min离心20min、加明胶(1%)综合处理;最优发酵饮品的配方为:原汁含量50%、加糖量10%、柠檬酸0.1%;高压蒸气灭菌优于间歇灭菌。

Abstract: The disposition of fermentative stock of Se-sich Flammulina velutipes,formula of fermentative beverge and selection of sterilization ways and so on have been studied.Experimenttal results showed that the optimum disposition way was as follows:cold treatment of stock 24h (0~3℃),centrifugation 20min (5000r/min) and adding gelatin 1%;The optimum formula of fermentative beverge was as follows :50%stock,10%sucrose and 0.1%citric acid.The autoclaving sterilization was found better than intermittent sterilization.
