用玉米渣生产玉米蛋白肽饮料

摘要:  以2709地衣形芽孢杆菌碱性蛋白酶对玉米面筋粉(玉米渣)进行水解,制取玉米肽饮料。对制取的工艺过程及各操作要点进行了研究。结果显示,只要控制好水解条件和进行适当的处理,可以得到水解度适中、风味良好的酸溶性蛋白肽饮料。

Abstract:  A kind of drink of corn peptide was preduced from corn gluten meal (CGM), hydrolyzed with an alkaline protease from B. Licheni formis 2709. The technological process and main points were studied.The results showed that a kind of drink which looks and tasts gnd can be made if the hydrolytic conditions were controlled correctly.
