摘要:  关于沪型大曲酒主体香成分己酸乙酯的生成途径,存在“乙酸乙酯和丁酸乙酯为前体物质”的学术上的分歧。多年试验表明,它是以己酸菌为主的多种微生物、酶作用的结果。

Abstract: About the producing process of ethyl caproate which was regarded as a main fragrant composition of Luzhou Daqu, there is a divergence of research work about the pioneer material-ethyl acetate and ethyl butyrate. After many years’ study , it has been proved that it’s contributed to enzymes and kinds of microbes in which caproic acid bacteria works as a leading role.
