摘要:
开展鸡肉中磺胺类药物残留摄入量的积累性暴露评估为鸡肉质量安全的监管提供技术支撑。采用食品安全风险评估的一般步骤:危害识别、危害特征描述、膳食暴露评估、风险特征描述,对鸡肉中的磺胺类药物残留进行积累性暴露评估。结果表明:各年龄段居民的理论暴露量均低于其理论每日允许摄入量(ADI),食品安全指数远小于1。说明磺胺类药物在鸡肉中残留不会对消费者身体健康产生危害,不必进入风险管理程序。

Abstract:
Cumulative exposure evaluation of sulfonamide residues in chicken was developed for chicken quality and safety supervision. A series of general procedures of food safety risk assessment such as hazard identification, hazard characterization, exposure assessment and risk characterization were applied for risk assessment of sulfonamide residues in chicken. Results indicated that the theoretical exposure amount of sulfonamide for residents of all age groups were lower than daily intake amount and food safety index was less than 1. Accordingly residues of sulfonamides in chicken do not harm to the health of consumers, and it is not necessary to use risk management procedures.
