基于Citespace和文献计量分析平台的鱼糜研究可视化分析

Visual analysis of surimi research based on Citespace and bibliometric analysis platform

摘要: 摘要:本文基于Citespace和文献计量分析平台,以中国知网(CNKI)和Web of Science(WOS)为数据库,分别以“鱼糜”和“surimi”为主题检索词,以收集到的2009—2021年CNKI 中的944篇和WOS 中的1082 篇文献为研究对象,对发文量、发文作者、国家、机构及期刊进行科技文本挖掘,并通过关键词聚类图谱、时间线图谱和突现图谱等进行数据可视化分析,总结国内外鱼糜研究的现状和内容演变。研究发现:鱼糜领域的研究受到越来越多人的关注,国内外发文量均呈上升趋势,且刊载量大的期刊多为食品领域的顶级期刊,中国的英文发文量为411篇,位居全球第一,占到总发文量的37.99%,除此之外泰国、美国、日本等国家均表现出较大的研究体量;不同区域的作者、研究机构及国家之间密切合作,在国际上已经形成了学术共同体;研究内容从宏观领域向微观领域发展,研究热点由加工工艺和鱼糜品质向保鲜、抗冻剂转变,目前“蛋白质”“肌球蛋白”“二级结构”等成为突现关键词,研究内容已经深入到分子水平;时区分析表明“感官评价”“品质”等关键词横跨整个研究阶段,成为鱼糜领域的研究基石。综上,鱼糜研究仍处于活跃的发展阶段,并具有良好的研究前景。

Abstract: Abstract:In order to summarise the current status and evolution of the content of domestic and international research on surimi,the keyword of “surimi” was retrieved from the China national knowledge infrastructure (CNKI) and Web of Science (WOS) databases based on Citespace and bibliometric analysis platform in this study. The 944 articles in CNKI and the1082 articles in WOS published in 2009—2021 were collected and used as dataset for mining scientific and technological texts considering the counts of publications, authors, countries, institutions and journals,and data visual analysis was carried out by using keywords clustering map, time line map and burstness map.The study found that the research of surimi has been paid more and more attention, and the counts of articles published both at domestic and international has been increasing, and the journals with large publication volumes were mostly top journals in the food field;China ranks first in the world with 411 science citation index (SCI) articles , accounting for 37.99% of the total number of articles published,followed by Thailand, the United States and Japan; A close cooperation between authors, research institutions and countries in different regions has formed an academic community at the international level;The research content has developed from the macroscopic field to the microscopic field, and the research hotspots have changed from processing technology and surimi quality to freshness and antifreeze. At present,"protein" "myosin" and "secondary structure " have become the new keywords and the research content has penetrated to the molecular level; The key words such as "sensory evaluation" and "quality" span the entire research period and became the cornerstones of surimi research by time zone analysis. In conclusion, the research of “surimi” is still in an active stage and has a bright future.
