饲养月龄对夏南牛肉品质、肌内脂肪及长链脂肪酸的影响

Effects of Feeding Age on Meat Quality, Intramuscular Fat and Long Chain Fatty Acid in Xianan Cattle

摘要: 为探究不同饲养月龄对夏南牛背肌的肉品质、肌内脂肪含量以及长链脂肪酸含量的影响 ,以 新生牛、12月龄和24月龄 夏南牛为研究对象,每个月龄选择3头体质量 相近的公牛进行屠宰,采集背肌检测pH值 、蒸煮损失、滴水损失、剪切力等肉品质指标,制作油红O染色切片,检测甘油三酯浓度与肌内脂肪含量 ,利用气相色谱质谱联用技术(GC -MS)分析肌肉中的中长链脂肪酸的组成。结果表明: 12月龄夏南牛背肌的pH值显著高于新生牛(P < 0.05),新生夏南牛背肌蒸煮损失显著高于24月龄(P < 0.05);24月龄夏南牛背肌的亚油酸含量显著高于新生牛和12月龄(P < 0.01),12月龄和24月龄夏南牛背肌的花生四烯酸含量显著高于新生牛(P < 0.05),24月龄背肌的总多不饱和脂肪酸(PUFA )含量较其他两个月龄最高。在本研究中,不同饲养 月龄的夏南牛除蒸煮损失变化较大外,其余指标差异不显著 ,从肌内脂肪含量和长链脂肪酸组成建议 24月龄夏南牛肉更符合人们的健康标准。

Abstract: To investigate the effects of different feeding months on meat quality, intramuscular fat content and long-chain fatty acid content of the longissimus dorsi of Xianan cattle (Bos taurus). The newborn, 12-month-old and 24-month-old Xianan cattle were selected as the research objects. Three cattles with similar weight were selected for slaughter at each month of age. Meat quality indexes including pH value, cooking loss, drip loss and shear force were collected for back muscle detection. Oil red O staining sections were prepared. Triglyceride concentration and intramuscular fat content were detected, and the composition of medium and long chain fatty acids in muscle was analyzed by gas chromatography-mass spectrometry (GC-MS). The results showed that the pH value of the longissimus dorsi of 12-month-old Xianan cattle was significantly higher than newborn cattle (P < 0.05) , and the cooking loss of the longissimus dorsi of newborn Xianan cattle was significantly higher than 24-month-old (P < 0.05). The linoleic acid content in the longissimus dorsi of 24-month-old Xianan cattle was significantly higher than that in newborn cattle and 12-month-old (P < 0.01). The arachidonic acid content in the longissimus dorsi of 12-month-old and 24-month-old Xianan cattle was significantly higher than that in newborn cattle (P < 0.05). The total polyunsaturated fatty acid (PUFA) content in the longissimus dorsi of 24-month-old Xianan cattle was the highest compared with newborn cattle and 12-month-old. In this study, there were significant differences in cooking loss of Xianan cattle at different months, but no significant difference in other indexes. In terms of intramuscular fat content and long-chain fatty acid composition, it is suggested that 24-month-old Xianan cattle is more in line with human health standards.
