Maize Carotenoids: From Basic Characteristics and Postharvest Stability to Germination-Based Enrichment Strategies

摘要: 类胡萝卜素作为一种具有潜在抗氧化活性的天然成分,在维护人体健康方面具有广泛益处,包括保护视力、维护皮肤健康、增强免疫力和预防慢性疾病等。为了促进身体健康,人体必须通过饮食或者补充剂摄入足够的类胡萝卜素,尤其是叶黄素和玉米黄质两种黄斑色素。本文首先系统综述了类胡萝卜素的膳食来源、玉米中类胡萝卜素种类、含量与生物活性,进而分析了加工贮藏方式对其含量的影响。在此基础上,聚焦于玉米的萌发过程,重点阐述了玉米类胡萝卜素合成途径及玉米芽苗中类胡萝卜素富集方法,尤其是物理场技术这种新兴策略对类胡萝卜素合成关键酶活性和基因表达的诱导调控。旨在为定向调控玉米萌发富集类胡萝卜素,进而开发相关功能性食品,并拓展其在健康领域的应用提供理论依据。

Abstract: Carotenoids, as natural components with potential antioxidant activity, offer extensive benefits for maintaining human health, including vision protection, skin health maintenance, immune enhancement, and prevention of chronic diseases. Adequate intake of carotenoids, particularly the macular pigments lutein and zeaxanthin, through diet or supplements is essential to promote health. This review first systematically summarizes the dietary sources of carotenoids, as well as the types, content, and bioactivity of carotenoids in maize. It then analyzes the impact of processing and storage methods on their content. Building on this foundation, this article focuses on the germination process, highlighting the biosynthetic pathways of carotenoids in maize and the methods for their enrichment in maize sprouts. Special emphasis is placed on the induction and regulation of key enzyme activities and gene expression in carotenoid biosynthesis by physical fields as an emerging strategy. The review aims to provide a theoretical basis for the targeted regulation of carotenoid enrichment during maize germination, thereby facilitating the development of related functional foods and expanding their applications in the health field.
