Abstract:

This article mainly using feedback inhibition of glucose feeding, modulating pH value of fermentation broth, as well as alkalinity neutral and fed- batch culture compound culture to study the high-density culture of the Lactobacillus Bulgaricus. The research indicated, alkalinity neutral and fed-batch culture compound culture conditions as follows: when Lactobacillus Bulgaricus cultivated for 18h or 26h, supplementing batch fluid 5ml in culture fluid the carbon nitrogen ratio is 0.67, and adjust pH value to 6.5 every 1.5h , after raising 36h, the highest thalline concentration of Lactobacillus Bulgaricus is 9.02×1011 CFU/ ml, dry weight of thalline is 14.266 g/L.

Key words: Lactobacillus Bulgarian, alkalinity neutral, fed-batch culture, high-density culture
