Research Progress on ELISA Method for Analysis of Biotoxins in Foodstuffs

Abstract:

The food poisoning caused by biological toxin has aroused much attention of all governments and the general consumer. The enzyme-linked immunosorbent assay (ELISA) is a method that combines the high efficiency of enzyme in catalyzing with the specific immune reaction between antigen and antibody. This paper reviewed ELISA application that focused on the concentration linear range, sensitivity and recovery in analysis of biotoxins (microbial, animal and plant toxins)in foodstuffs in recently years. The purpose was to promote the application of this technology in food safety examination.
