Kinetics of β-Amylase-catalyzed Hydrolysis of Corn Starch

Abstract:

The kinetics of enzymatic hydrolysis of corn starch by β-amylase were described and fitted with the Michaelis- Menten equation and the kinetic parameters were calculated by the Lineweaver-Burk and the Wilkinson methods. The β-amylasecatalyzed hydrolysis of corn starch obeyed the classical first-order reaction law and the kinetics could be modeled by the Michaelis-Menten equation.
