Study on Nutrient Compositions of Loach and Its Extractives

Abstract: Toanalyzethecontents ofthenutrie ntcompositions intheloach(Misgurnus angillicaudatus)powderandits extractives ofthe live body andpepsinhydrolysate.We have obtainedthe contents ofthe totalproteintotal saccharides,free amino acids hydrolyzedamino acids riboflavinandtolic acid,and12minerals suchas K?Na ?Mg ?Fe?Zn?Cu?Mn ?Se?Pb?Cd?Hg ?As etc,according to the national sta ndard methods.The extractive of pep sin hydrolyzate contained richer amino acids and higher trace e lements thus showed good prospect fo r development This work has provided new scientific evidence for further stu dies and comprehensive utilization of the loach.
