An Investigation on Inhibition of Lipoxygenase Activity,Related to Ripening and Senescence of Vegetables &Fruits

Abstract: Lipoxygenase is a key enzyme in ripening and senescence of vegetables and fruits . Lipoxygenase was extracted from soybean and the inhibition of it’s activity was investigated so as to select more inhibitors with enzymatic kinetic methods in vitro. The results showed that cysteine、 vitamin C 、BHT 、 TBHQ and 95% ethanol extracts of HOUPU、BAISHAO etc had good inhibitory effect on lipoxygenase .
