Preparation of Bioactive Glutamine-enriched Oligopeptide Nutrient

Abstract: Glutamine-enriched oligopeptide nutrient was obtained by hydrolyzing corn protein with prozyme A and alcalasesuccessively in the 50 liter volume. The conditions for prozyme A were: pH8.5, [s] 2%, [E] 90000 units per 100 grams corn protein,DH10 and temperature 40 ℃. The conditions for alcalase were: pH8.5, [E] 30000 units per 100 grams corn protein, 1h andtemperature 45℃. The hydrolysate was separated by ultrafilter (COMW 5000), and then condensed by reverse osmosis (10kg/cm2, room temperature, 2h). The ratio of effective glutamine to total amino acids was 17.9%. The protein yield was 33.3%.
