Opioid Antagonist Activities of Enzymatic Hydrolysates from Rice Bran Protein

Abstract: The enzymatic hydrolysis of rice bran protein was studied with degree of hydrolysis. Trypsin was found to be the most effective protease and its optimum conditions were pH8, ratio of enzyme to substrate 1:100 and temperature of 37℃. Resulting hydrolysates were tested for their opioid antagonist activities based on guinea pig ileum-contracting assayss. The hydrolysate produced at 11.9% of degree of hydrolysis showed the highest opioid antagonist activity. High performance size exclusion chromatography results indicated that its molecular weight distribution mainly ranged from 125~24233Da.
