Quality Change Characteristics and Shelf Life Prediction of Chilled Pseudosciaena crocea

Abstract: Microbiological, chemical and organoleptic quality changes for chilled Pseudosciaena crocea stored aerobically at 0, 5℃ were mainly assayed. The bacteria growth of chilled Pseudosciaena crocea was described by using modified Gompertz equation. The shelf life was assayed by using TVBN, for organoleptic and microbiological quality indexes, and then validated by using the exponential spoilage model. The results showed that the shelf life is 408 or 252h, TVC 7.37±0.04 1gCFU/g or 7.26±0.07 lgCFU/g, TVBN 31.16±0.64, or 27.32±0.76 mg/100g during the storage at 0 or 5℃, respectively. The shelf life on Pseudosciaena crocea at temperatures 3℃ and 5℃ were predicted by the exponential spoilage model . Basic errors between predicted shelf life and observed shelf life are 5.6%~-14.9%. The results indicate that the model is valuable for rapid and realistic prediction of the freshness quality and shelf life of chilled Pseudosciaena crocea stored aerobically from 0 to 5℃.
