Properties of Octenyl Succinic Acid Modified Starch and Application

Abstract: The octenyl succinic acid modified starch (OSA) was prepared from waxy maize starch with octenyl succinic anhydride, and then treated with alpha-amylase. This paper mainly discussed the reasons for the changes of the physico-chemical properties of the treated starch, and the effects on starch molecular after treatment. The paper also disscussed the application properties of OSA. The research work in this paper has important and instructive meaning to industrial application of OSA.
