Study on Isolation and Antioxidant Activity of Soybean Bioactive Peptides

Abstract: To prepare the soybean antioxidant peptides,various peptides in the soybean protein hydrolysates were fractionated by Sephadex G-25 gel filtration,then the scavenging capacity to hydroxyl free radical and the distribution of molecular weights of fractional peptides were determined and at the amino acids compositions of the optimal antioxidative peptide fractions were analyzed.The results showed that six fractional peptides are fractionated by Sephadex G-25 gel filtration from the soybean protein hydrolysates,SPP4 has the maximum scavenging rate to hydroxyl free radical 80.13% and its APCL is 4.The main amino acids in SPP4 are Val,Leu,Phe and Lys.The results indicated that soybean bioactive peptide composed of 2~6 amid acids has strong antioxidant acitivity.
