Studies on Extracting Process of Polysaccharide from Jujube Date by Cellulase and Effects of the Enzyme on Molecular Mass Distribution

Abstract: The optimum extraction conditions of polysaccharide from jujube date by cellulase were investigated by the orthogonal design. The experiment results showed that the optimum conditions are is addition of 0.02% the enzyme amount into water at pH 4.5, and the treatment for 2 h while the temperature is maintained at 60 ℃. The extraction process with water and enzyme had no significant effects on molecular mass distribution of jujube dates polysaccharides.
