Detection of Ascorbic Acid in Vegetables with Constant Current Coulometry Method

Abstract: To determine the content of ascorbic acid in vegetables with the constant current coulometry method, dead-stop method was used for the detection of end point of the coulometric titration. The results of detection are identical with the method of international standard. This method is simple, rapid and sensitive in comparison with the international method, especially the detection of dark samples.
