Abstract: The activity of alcohol dehydrogenase(ADH) in Saccharomyces cerevisiae HD34-1,which was constructed by transferring the ADH gene from B.sub into Saccharomyces cerevisiae HD34,was controlled by the promoter Gal.In order to make clear how the ADH gene is expressed in HD34-1,a galactose consistence gradient and an alcohol consistence gradient were designed for fermentation experiment, and then the activity of ADH was determined. As a result, the highest activity of ADH presents at galactose 2%,induction time 16 hours and content of alcohol lower than 1%(W/W).
