Manufaturing of Solid Beverage of Compound Dietary Fiber

Abstract: Water-solubility dietary fiber(SDF) and kelp amylose was prepared by hydrolysised byproduct of manufacturing bean curd and kelp, and a kind of solid beverage of compound dietary fiber was manufactured. Soybean IDF(infusibility dietary fiber)and SDF were preared by the methods of alkali solution extracting and enzyme hydrolysis. Kelp amylose was prepared by hydrolysised with compound enzyme. The results showed that the extracted conditions of soybean IDF are the concentration of NaOH 5 %, soaking time 60 min and soaking temperature 80 ℃. The IDF are hydrolysised by cellulosic enzyme, and the conditions are the ratio of enzyme to substrate 1 %, and ratio of IDF to water 1:12 (W/V), pH value 4.5, hydrolysis time 12 hours, the temperature 40 ℃. Under the above conditions, the yield of SDF is 36.01%. The hydrolysis conditions for kelp amylose with compound enzyme are the ratio of compound enzyme to kelp powder 1%, the optimum proportion of the compound enzyme (cellulose, pectinase, protease) 2:1:2, and kelp is hydrolsised at pH 6.0 and 50 ℃ for 6h. The yield of kelp amylose is 10.71 %.
