Abstract: Effects of extraction pressure, temperature, flow rate and time on yield of melon seed oil extracted by supercritical carbon dioxide were studied, and components of the oil were analysis by GC-MS. The results showed that the optimal extraction conditions are as follow:extraction pressure 30 MPa,temperature 40 ℃,carbon dioxide flow rate 12 kg/h and extraction time 120 min. The fatty acid components in melon seed oil are oleic acid, linolic acid, linolenic acid, octadecoic acid, palmic acid and arachic acid.
