Study on Extraction Effects Process of Water Insoluble Dietary Fiber from Pear Pomace

Abstract: The extraction technolgy of insoluble dietary fiber from pear pomace by alkali solution was investigated. The effects of ratio between material,and solution,concentration of alkali,temperature and time on the extraction ratio were studied. The optimal extractions conditions were obtained by L9(34) orthogonal methodology. The water holding capability and hydration capability of finished product are 10.23 gram water and 6.67 ml per gram product,respectively.
